History

From the 80's

The cooperative CASE ROSSE was founded in the eighties as a cooperative of land management to address cereal, wine, olive and fodder. In 1992 we created, within the company, one of the first farmhouses in the Marche region that still stands out oer the deliciousness of the food offered. In 2005 he realized, following the recognition of the PDO label to the tender ascolana olive, a plant of 2ha of tender that was added to the 6ha previously cultivated.

Production

Artisan Production

The soft olive produced is processed in the laboratories of the company, according to what is provided for by the specification of production in order to obtain:

  • Acolic Olive of Piceno DOP in brine
  • DOP Ascolana olives in brine
  • Stuffed Ascolana olives of Piceno DOP

Over time, the cooperative has widened the range of its offer by producing:

  • Truffled olives prepared according to an old recipe dating back to 1800 by the cooks of the wealthy families of Ascoli Piceno who enriched the meat stuffing with black truffles. The cooperative has added to the breadcrumbs with black bread which gives the olives the typical appearance of the hypogeum mushroom.
  • The Ascolana olive, obtained from non-DOP olives, filled with the same meat mixture used for the Ascolana olive of Piceno DOP.
  • Cremini with cream flavoured, as the ancient recipe says, by Anisetta Meletti, typical ascolano liqueur.
  • Mozzarelline with raw materials produced in the territory of Ascoli
  • Breaded pecorino cheese
  • Monovariate EVO oil of tender ascolana.
  • Blend of extra virgin olive oils.
  • Blend black olive oil.
  • Vegetarian olives
  • Saltimbocca.
  • Spicy green olives
  • Olive with cheese.

All our products are made in an artisan way, having cuda to choose high quality raw materials, purchased from local producers whose reliability is certain.

Moreover, taking advantage of the opportunity of the short supply chain, the Case Rosse cooperative is able to maintain a high quality-price ratio.
